Plant-Based Show Stopping Sides! 

Welcome to the first installment of our plant-based, exciting, and fresh Redifarms Thanksgiving! 

This Thanksgiving forget the bird! We are ALL about the sides and we can’t wait to share two of our favorite plant-based, veggie-forward, show-stopping side dishes with you (using our fresh microgreens, lettuces, herbs, and mushrooms of course). These dishes have historically been the type to tear the family apart, but we have found that our spin on the dishes has everyone agreeing that this certainly is not the same old boring Thanksgiving we know of years past.  

Let’s start with a side that will bring the crowd together, roasted Brussels Sprouts. Brussels Sprouts conjure up visions of tiny cabbages that have been brought to the Thanksgiving table in a bland, grey, steaming heap. These little guys often go untouched and just sit on the table in their little pile of sadness. This polarizing dish has been ripping families apart for years, and yet when prepared the Redifarms way, everyone in the family comes together.  

We have found the best way to present them and bring out their best features is to roast them. When roasted these beauties become a delectable treat that engages all the senses with hints of garlic, sweet honey or agave caramelization, tangy balsamic vinegar, pops of hot pepper flakes, and a crispy and tender irrespirable texture that everyone from Grandma to the Grandkids will enjoy.

We move on now from one polarizing dish to the next: Stuffed Mushrooms. Whether you are Team Mushroom or not there is always someone at the Thanksgiving table on the opposing side. This is something we find even in our Farm Stand, most people are curious to try mushrooms but can’t get past their earlier experiences when it comes to even the idea of eating them.  

At Redifarms, our farm team prides itself on our beautiful and flavorful mushrooms and we would love to make them the star of the show – however, even we know we are not going to convert everyone into mushroom lovers overnight. This is something our team has challenged ourselves to remedy; how to bring everyone together with the power of these delicious mushrooms? Then it hit our team of recipe innovators (aka friends and family)…let’s take all the components of stuffed mushrooms and turn them into a dip! This savory baked dish dances on the line between dip and casserole with a crispy crunchy top and flavorful lusciously soft interior making it perfect to pair with crackers or just a scrumptious show-stopping dish on its own.

    Mushrooms sound great! Brussels sprouts also sound easy enough to make !
